Zakwaszenie lekko Lactobacillus casei z biotyku. Zadam brettanomyces bruxelensis w czasie zakwaszania. Podczas gotowania odbiorę z 2 litry na herbatkę chmielowa. Zagotuje to i nachmiele mocno po gotowaniu. Mam dużo centteniala i trochę simcoe. Zabije tym Lactobacillus. Dodam wtedy drożdże winiarskie i płatki dębowe. Zostawię to na dłuższy czas.
