Przed dodaniem prażonych, łuskanych ziaren kakaowca, musimy je jeszcze rozdrobnić (chyba że udało nam się dostać już w formie rozdrobnionej), a także zdezyfekować. Polecamy w tym celu spryskać je spirytusem. Tak przygotowane wrzucamy do wygotowanej rajstopy/woreczka muślinowego i wrzucamy na ok. 14 dni na zimno.
